Pumpkin Apple Muffins
2 ½ cup Flour
2 cups Sugar
1 Tbl. Pumpkin Pie Spice
1 tsp. Baking Soda
½ tsp. Salt
Mix together and set aside.

2 eggs
1 cup solid Pumpkin
½ cup Oil
Mix together and add to above dry ingredients.

2 cups peeled and chopped Apples
Stir into batter

Streusel Topping
2 Tbl. Flour
¼ cup sugar
½ tsp. cinnamon
2 tsp. Butter
Mix with fork or clean fingers until crumbly.

Spoon apple batter into muffin cups and sprinkle with streusel topping. Bake at 350* 30-40 minutes. Toothpick should come out clean. Zyliss Softskin Peeler for apple peeling is incredible.

Apple Crisp
¾ cup Brown Sugar
½ cup flour
½ cup Oats
¾ tsp. cinnamon
¾ tsp. nutmeg
1/3 cup soft butter
4 cups peeled and sliced Apples

Place Apple in a 9×13 pan, mix first 6 ingredients together and sprinkle over apples. Bake at 375* for 30-40 minutes.

Banana Bread

3 over-ripe Bananas smashed
1 cup Sugar
1 ½ cup flour
1 tsp. Baking Soda
1 tsp. Salt
1 Egg
¼ cup melted Butter

Smash Bananas in a mixing bowl, sift together next 4 ingredients, add dry mixture to bananas, add egg and melted butter and stir. Do Not stir too much, just enough to mix all ingredients together. Put mixture into Loaf Pan and Bake at 325* for 1 hour. Toothpick should come out clean.

Grandpa’s Chocolate Pie
2 small boxes Instant Chocolate Pudding
2 cups Milk
Mix together

Fold in 1 small tub of Cool Whipped Topping

Pour Mixture into a Oreo Cookie or Graham Cracker Pie Crust. Top with 1 small tub of Cool Whipped Topping and Garnish with Choc. Syrup Drizzle or Choc. Bar Shavings. Refrigerate.

Shelley Bars
1 – 10 ½ oz. Bag of Mini Marshmallows
4 Tbl. Margarine
Melt together

2 cups popped Popcorn
2 cups Crunchy Oat-Square Cereal
1 cup Mini or Stick Pretzels
1 cup M&M’s
Pour melted mixture over dry goodies and press into an 11×7 glass pan. Cut into squares.

Molten Lava Cakes

4 squares semi-sweet baking chocolate
½ cup butter
1 cup powdered sugar
2 eggs
2 egg yolks
6 Tblsp. Flour

Place 4, ¾ cup greased ramekins on Baking Sheet
Microwave chocolate and butter in large bowl until melted. Mix with whisk. Stir in sugar until well blended. Whisk in eggs and egg yolks, stir in flour.

Divide among prepared ramekins. Bake @425 degrees for 13-14 minutes. Let stand 1 minute, then invert onto plate, sprinkle with powdered sugar, top with Whipped Cream or……drizzle with fudge, serve with ice cream, caramel, etc.

Lemon Raspberry Muffins
2 cups flour
1 cup sugar
3 tsp. baking powder
½ tsp. salt
2 eggs
1 cup half & Half
½ cup vegetable oil
1 sp. Lemon extract
1 cup raspberries

Sift dry ingredients into wet ingredients, stir until smooth and fold in raspberries. Spoon batter into muffin cups and Bake @ 400 degrees for 22-25 minutes.
