No Bake Cookies
2 cups Sugar
¼ cup Cocoa
½ cup Butter
½ cup Milk
1 tsp. Vanilla
½ cup Peanut Butter
3 cups Oatmeal
Bring first 4 ingredients to a Boil. Remove from heat and add vanilla and peanut butter and stir in Oatmeal.
Drop spoonfuls onto Foil and Cool. Use Norpro’s Cookie Scoop for consistant size.
Puppy Chow
1 cup Chocolate Chips
½ cup Peanut Butter
½ stick margarine
¼ tsp. vanilla
9 cups Chex Cereal
1 ½ cups Powdered Sugar
Melt first 4 ingredients together. Pour melted mixture over cereal and fold together. Sprinkle powdered sugar over cereal to coat. Store Puppy Chow in airtight container (OXO POP Containers). We like it stored in the freezer!
Cracker Snack
¾ cup Canola or Vegetable Oil
1 pkg. dry Ranch Dressing
1 cup Oyster Crackers
1 cup Gold Fish Crackers
1 cup Pretzle sticks
Whisk warm oil and dressing mix together. Pour over crackers and toss to coat. Cool on jelly roll pan and store in airtight container. OXO POP’s work great!
Pumpkin Apple Muffins
2 ½ cup Flour
2 cups Sugar
1 Tbl. Pumpkin Pie Spice
1 tsp. Baking Soda
½ tsp. Salt
Mix together and set aside.
2 eggs
1 cup solid Pumpkin
½ cup Oil
Mix together and add to above dry ingredients.
2 cups peeled and chopped Apples
Stir into batter
Streusel Topping
2 Tbl. Flour
¼ cup sugar
½ tsp. cinnamon
2 tsp. Butter
Mix with fork or clean fingers until crumbly.
Spoon apple batter into muffin cups and sprinkle with streusel topping. Bake at 350* 30-40 minutes. Toothpick should come out clean. Zyliss Softskin Peeler for apple peeling is incredible.
Banana Bread
3 over-ripe Bananas smashed
1 cup Sugar
1 ½ cup flour
1 tsp. Baking Soda
1 tsp. Salt
1 Egg
¼ cup melted Butter
Smash Bananas in a mixing bowl, sift together next 4 ingredients, add dry mixture to bananas, add egg and melted butter and stir. Do Not stir too much, just enough to mix all ingredients together. Put mixture into Loaf Pan and Bake at 325* for 1 hour. Toothpick should come out clean.
Grandpa’s Chocolate Pie
2 small boxes Instant Chocolate Pudding
2 cups Milk
Mix together
Fold in 1 small tub of Cool Whipped Topping
Pour Mixture into a Oreo Cookie or Graham Cracker Pie Crust. Top with 1 small tub of Cool Whipped Topping and Garnish with Choc. Syrup Drizzle or Choc. Bar Shavings. Refrigerate.
Shelley Bars
1 – 10 ½ oz. Bag of Mini Marshmallows
4 Tbl. Margarine
Melt together
2 cups popped Popcorn
2 cups Crunchy Oat-Square Cereal
1 cup Mini or Stick Pretzels
1 cup M&M’s
Pour melted mixture over dry goodies and press into an 11×7 glass pan. Cut into squares.
Lemon Raspberry Muffins
2 cups flour
1 cup sugar
3 tsp. baking powder
½ tsp. salt
2 eggs
1 cup half & Half
½ cup vegetable oil
1 sp. Lemon extract
1 cup raspberries
Sift dry ingredients into wet ingredients, stir until smooth and fold in raspberries. Spoon batter into muffin cups and Bake @ 400 degrees for 22-25 minutes.
